Elise Museles is the founder and she has tons of great nutrition & wellness advice on her site, including this recipe below for Kale Crisps. (BTW I made a different version of Kale Chips last year and these are MUCH, MUCH better. I have also recently learned from my very favorite Aunt that raw unfiltered organic apple cider vinegar has tremendous health benefits… so you basically are getting a double whammy with this recipe.)
Elise says “This recipe is easy to make and can add a healthy dose of crunch along with chlorophyll, vitamins, minerals and phytonutrients. Specifically, kale is rich in potent cancer-fighting substances, loaded with bone-building vitamin K, and has one of the highest antioxidant levels of all vegetables. Did I mention that these crisps taste good, too?” They really are yummy!!! Even my very picky 7 year old son likes eating these.
Kale Crisps Recipe
6 cups kale, about 2 bunches, rinsed with stems removed
1 Tblsp apple cider vinegar
2 Tblsp olive oil
Sea salt to taste
Variation: Add a drop of sesame oil and sesame seeds for a slightly different flavor.
Preheat oven to 350 degrees.
Cut kale into 2 to 3 inch pieces. Mix vinegar, oil, and salt in a large bowl then add kale and mix by hand to evenly cover all the leaves. Place the kale on baking sheets (I like to use parchment paper for easy clean up) and bake until the kale leaves are crispy.
NOTE: baking time may vary depending on the size of your chips and desired crispness.
